Delight in the intricate flavours and refined presentation of Summer Pavilion's Chinese Chef Cheung Siu Kong, while Chef Kenichi Fujimoto of Sushi Fujimoto Hong Kong showcases the meticulous precision, paired with his uniquely vibrant personality that brings warmth to both his creations and his guests. This one-of-a-kind tasting menu consists of seven-courses revolving around seven key ingredients - sea urchin, lobster, scallop, beef, vegetables, rice and dessert - each crafted by the chefs in their distinct styles.

Lunar New Year Dining
Exclusive Lunar New Year culinary highlights include the steamed Dong Xing Grouper fillet with luffa gourd and black fungus; double-boiled chicken soup with fish maw, matsutake mushroom, dried scallop and soaked nostoc algae; steamed vermicelli with king scallop, caviar, crab roe and egg white; and a sweet finale of chilled superior bird's nest with pear and osmanthus. Vegetarian yu sheng and pen cai are also available for takeaway.
Diners celebrating the first 15 days of the Lunar New Year at Summer Pavilion will receive a set of limited edition Ritz-Carlton red packets and a pair of Mandarin oranges, per reservation.

Lunar New Year Pen Cai
His creation features ten layers of superior seafood and meats including sea perch, scallops, fish maw, abalone, sea cucumber, roast pork, roast duck, goose web, dried scallop, Chinese mushroom, black moss and seasonal vegetables.
Option of SGD 480 for 4 persons and SGD 960 for 8 persons, an advance order of three days is required.
